Bananas with Butterscotch Sauce

| Bananas (ripe) |

| Spring roll wrappers |

| Butter |

| Cream |

| Caster sugar 1tbs ground cinnamon

1/2 cup |
| Strawberries |

Method:
- melt butter in solid based sauce pan
- once melted add the brown sugar and cook till dissolved
- add cream to melted sugar and boil till reduced by half (then
set aside)
- peel the bananas and cut in half
- cut the four spring roll wrappers in half (from corner to corner)
- place one banana half on the longest edge of the wrapper, fold
the two longest ends and wrap up and secure it with a toothpick
- placed wrapped bananas in a pre-heated deep fryer and cook till
golden brown
- Serving suggestion:
- When cooked, roll banana wraps in the cinnamon sugar and place
in 4 bowls or on 4 plates. Ladle sauce over the bananas and serve
with ice cream, strawberries and garnish with mint.
